Grey Goose Cosmo

  • 2 oz GREY GOOSE® L'Orange Flavored Vodka

  • ¾ oz Triple Sec

  • ¾ oz Cranberry Juice

  • ½ oz Fresh Lime Juice

  • + Orange Twist

Combine liquid ingredients into a cocktail shaker with ice. Shake and strain into a chilled martini glass. Garnish with orange twist.

Bourbon Raspberry Sour

  • 2 parts Woodford Reserve Double Oaked

  • .5 parts Chambord or Raspberry Syrup 

  • .75 fresh Lemon Juice

  • 3-4 Woodford Reserve Chocolate Bitters

Combine all ingredients in a shaker, add ice, shake, and double strain into a coupe or martini glass. Garnish with three skewed raspberries.

Ingredients:

2 parts SVEDKA Rosé

1 part Lemon Juice

1/2 part Simple Syrup

2 Raspberries

2 Blackberries


Method: Combine all ingredients into shaker tin and quick muddle. Add ice, and shake. Transfer all cocktail to rocks glass. Garnish with berries.

Kim Crawford Kim De La Créme

 Ingredients:

  • 1 bottle Kim Crawford Rosé, well chilled

  • 3 cups sliced strawberries

  • ⅓ cup sugar

  • Club soda

  • 1 carton vanilla ice cream

  • Edible flowers to garnish

Directions:

Makes 5 servings.

In a medium bowl mix the strawberries and sugar. Cover and let sit for 30-90 mins mixing occasionally. Divide the strawberries and any juices between 5 rocks glasses, add wine and a splash of club soda. Top with a generous scoop of ice cream. Garnish with your favorite edible flowers.

Tips:

Use coconut based ice cream for dairy free/vegan option.

Substitute peaches, raspberries or any of your favorite summer fruit for the strawberries.

Use honey instead of sugar for a richer flavor.

Crawford Cupid

INGREDIENTS:

·        3 oz Kim Crawford Sauvignon Blanc

·        ¾ oz grapefruit juice

·        1 Tbsp simple syrup

·        Sparkling water

·        Ice

·        Crème de Cassis

·        Sage leaves and grapefruit for garnish

 DIRECTIONS:

Mix Kim Crawford Sauvignon Blanc, simple syrup and grapefruit juice in a shaker or mixing glass with ice.

Strain over ice into serving glass and fill with sparkling water.

Top with a splash of crème de cassis and garnish with sage leaves and grapefruit twist.

Reed’s Love Potion Mocktail

*Make it alcoholic with 

  • Splash of Ginger Vodka OR a smidge of Cinnamon Schnapps

Ingredients

  • Ingredients for Raspberry Simple Syrup:

    • 1 cup Granulated Sugar

    • 1 cup Water

    • 2 ½ cups fresh Raspberries (2 6-ounce cartons)

  • Ingredients for Love Potion #9:

    • Cherry Pop Rocks (6 packages per 4 glasses)

    • Red Hots (6-8 per glass)

    • Raspberry Simple Syrup (2 tablespoons per glass)

    • Reed’s Ginger Ale (8 ounces per glass), chilled

Instructions

  • Instructions for Raspberry Simple Syrup:

    • Combine all ingredients in a medium saucepan over medium-high meat

    • Stir frequently to dissolve the sugar

    • Bring the mixture to a boil and reduce to a simmer

    • Simmer 5 minutes; smash the raspberries with a mixing spoon or whisk while simmering to break them up

    • Remove from heat and allow to steep until cool (approximately 1 hour)

    • Strain through a fine mesh sieve and keep sealed in the refrigerator for use.

  • Instructions for rimming the glass with Pop Rocks

    • Pour the pop rocks into a shallow saucer or other small plate

    • Pour some of the raspberry simple syrup into a bowl large enough for the top of the glass to fit into

    • Turn a glass upside down and touch just the top of the glass opening to the simple syrup; enough to moisten the rim only

    • Place the glass opening down in the plate of pop rocks and rotate from side to side to coat with pop rocksNOTE: The pop rocks can gently be pushed toward the outside of the glass to aid in coating

    • Place the glass, still upside down, onto a clean surface and allow to sit for the pop rocks to dry onto the glass (approximately 10 minutes) NOTE: This aids in the adherence to the glass

  • Instructions for Love Potion Number 9:

    • Add 6-8 red hots in the bottom of each glass

    • Add the raspberry simple syrup and fill with ginger ale NOTE: do not fill up to the pop rocks or they will begin to explode

*Make it alcoholic with 1 1/2 ounces vanilla vodka

 Ingredients:

Instructions:

  • Mix the sugar and water in a pot large enough to comfortably hold all of the ingredients

  • Bring to a simmer over medium heat, then stir until all of the sugar dissolves

  • Add the raspberries and continue to simmer until the berries break down (5 to 7 minutes)

  • Remove the mixture from the heat and allow it to cool to room temperature, then strain

3 oz Copalli Barrel Rested Rum 

1 ½ oz Pama liqueur

 Directions

Clap mint to release oils. Combine mint with Copalli Rum, Pama, lime juice and honey syrup. Mix and Muddle. Top with Soda water and strain into chilled coup glasses. Garnish each with a sprig of mint and a lime wedge. Makes 2!

Ingredients:

2 oz Wilderton Earthen

¾ oz Beet + Roasted Chicory Syrup*

¾ oz Burnt Orange*

½ oz Lemon

½ oz Aquafaba
*Beet + Roasted Chicory Syrup:

  • Mix 500 ml of beet juice and 500 g cane sugar

  • Add 50 g of ground roasted chicory

  • Mix and place into large plastic bag

  • Sous vide at 170 degrees Fahrenheit for 45 mins

  • Strain

  • Let cool

Burnt Orange Juice:

  • Cut oranges in half

  • Burn over an open flame until charred

  • Let cool

  • Slice a wheel for garnish

  • Juice

  • Strain

  • Enjoy

Method: Add all ingredients to your tin, dry shake, add ice, wet shake then double strain into a chilled coupe glass. Garnish with burnt orange wheel on rim. Enjoy!

This cocktail combines red wine, spiced pineapple syrup, vermouth, and the aged-dark rum Santa Teresa 1796 for a bold and seductive vibe.

Aragua’s Romance

Ingredients:

  • 1½oz Santa Teresa 1796

  • ½ oz Capelleti Apertivo

  • ¼ oz Spiced Pineapple Syrup

  • ½ oz Red wine

Directions: Add all ingredients into mixing glass, excluding red wine, add ice, stir for 20 seconds. Pour into rocks glass over large Ice cube, top with red wine floater and garnish with a rose petal.

Now I don’t hardly know her, but I think I could love her—the Clover Club is a dreamy dram of egg white, simple syrup, and all-natural Bombay Bramble gin made with freshly harvested blackberries and raspberries. Ingredients

  • 1 ½ oz Bombay Bramble

  • ¾ oz lemon juice

  • 1 oz Simple Syrup (1:1 Sugar to Water)

Directions: Put some cubed ice into your cocktail shaker, pour Bombay Bramble, lemon juice, sugar syrup and egg white into the shaker, shake hard & strain into a chilled coupette or martini glass.

Espolòn Paloma 

Ingredients 

·         1 oz Espolòn Blanco  

·         .75 oz Ancho Reyes Verde Chili Liqueur  

·         1 oz fresh grapefruit juice  

·         .5 oz fresh lime juice  

·         .5 oz agave syrup  

·         3 dashes Habanero/Hellfire Bitters  

·         grapefruit soda water (Bubly, LaCroix, etc) 

Method 

· Prepare your Collins glass with a chili salt rim. Add ice to glass.  

· Combine all ingredients except soda in a tin, add ice and shake. Strain into a Collins glass and top with grapefruit soda. Garnish with a thin grapefruit slice and lime wheel.

Ingredients 

·         2 oz Montelobos Espadin  

·         1 oz Cranberry Syrup (combine 1 part unsweetened cranberry syrup with 1 part sine sugar by weight, stir and let combine) 

·         .75 oz Fresh Lime Juice 

Method 

· Combine all ingredients in a tin. Add ice and shake. Strain over fresh ice in a double rocks glass. Garnish with a cranberry on a pick.

  • 2 Fresh Passion Fruit

  • 1 Slice Thai Chili Pepper

Method: 1 green olive. Fill a mixing glass with ice cubes and add the ingredients. Stir on ice, then strain into a coupe or martini glass. Add the olive. Tip: chill the glass in the freezer before serving

Dos Maderas 5+3: A blend of 5-year-old Bajon and Guyanese Rum that rest for an additional 3 years in casks of 20-year-old Palo Cortado. Elegant notes of deep amber rum, with rich hints of pecan, vanilla and smoky oak. The palate is balanced with ripe fruit and tropical spice, layered over smoky oak nuances with hints of sherry and a tobacco finish.

Dos Maderas Classic Daiquiri

1 1/2 ounces rum – Dos Maderas 5+3 Rum

1 oz. fresh squeezed lime juice

.5 oz (2:1) Rich Cane Syrup

Prepare your Rich Cane Syrup by dissolving 2 parts sugar into 1 part boiling water. Let cool. Cut a lime in half and juice your limes. Chill a Coupe. Add all ingredients to your shaker and fill shaker with cracked ice. Shake vigorously for 10 seconds. Double-strain, using a fine mesh strainer to remove excess pulp and ice shards, into your chilled glass. No garnish necessary but some prefer a lime wheel on the glass rim.

Ingredients:

1 bottle Kim Crawford Illuminate Rosé

Juice of 2 lemons (about ⅓ cup lemon juice)

8 large strawberries, thinly sliced

1 small cucumber, thinly sliced

4 basil sprigs

4 mint sprigs

2 cups sparkling pink lemonade

Method:

In a large pitcher, combine the Kim Crawford Illuminate Rosé, lemon juice, strawberries, cucumber, basil, and mint. Refrigerate for at least 1 hour but up to 4 hours. Stir in the sparkling pink lemonade right before serving.

Pour into 4 to 6 ice-filled Collins glasses. Garnish with lots of pretty herbs and strawberry slices.

WINTER WHITE SANGRIA

INGREDIENTS:

1 bottle Kim Crawford Sauvignon Blanc (substitute KC Illuminate for a lighter cocktail)

1 ½ cups white cranberry juice

1 lime, thinly sliced

1 orange, thinly sliced

4 to 6 thyme sprigs, for garnish

1 can lemon flavored club soda

DIRECTIONS:

Add 1 bottle Kim Crawford Sauvignon Blanc, 1 ½ cups white cranberry juice, and 1 thinly sliced lime to a large pitcher and stir to combine.

Pour into 4 to 6 wine glasses filled with ice. Garnish with a thyme sprig

COYA Brought Peruvian Flair Exclusively To ZUMA

During international Peruvian restaurant, COYA, hosted an exclusive pop-up in Zuma New York. The activation had taken over Zuma’s second floor bar, bringing COYA’s signature bar food, pisco sours and Ritual, the concept’s beloved weekly tribal music takeover by COYA Music, to New York City’s contemporary Japanese restaurant in Midtown Manhattan.

Inspired by Peru’s rich culture and flavorful eats, the pop-up offered a menu of COYA favorites including dishes such as atún chifa ceviche made with yellowtail tuna, soy, sesame seeds and spring onions; salmon tacos made with salmon, aji Amarillio, chives and cream cheese; and croquetas de lubina with Chilean sea bass, miso and spicy mayo.

Drink choices included COYA’s famed pisco sours,; chilcano with 1615 Pisco Quebranta, lime, ginger ale and angostura bitters; aji margarita featuring jalapeño infused tequila, lime, agave and avocado and green apple puree; and apricot mezcal negroni made with Del Maguey Vida mezcal, Cynar and apricot antica formula. For a non-alcoholic choice, guests found the chicha mejorada mocktail on the menu, made with purple corn, pineapple, cloves, vanilla and palo santo.

As part of the pop-up, COYA hosted its renowned multidimensional musical experience to New York City with COYA Ritual nights on Thursday, November 18th, as seen at COYA Mayfair, London and Dubai. The ritual nights brought melodic techno music, dancing and cocktails together with inspiration from Aztec culture to instantly transport guests from Manhattan to the vibrant tribal festivals of Peru. Creating a divine, magical space unlike anything other, guests heard music from COYA’s own music label, with beats from past Ritual DJs, including Laolu, Sparrow & Barbossa, FNX Omar and Diass. Nightly music at COYA at Zuma was overseen by Stephane Petit, COYA’s own global music director.

Organic Wine Will Become Even More Popular in 2022

Since the Covid-19 pandemic is still here, sustainability is at the highest level of importance, and consumers are a lot more concerned about what they eat or drink. Because of this, they are fueling the development of the organic wine movement worldwide.

Italy, Spain, and France are the leading countries in organic wine production all across the globe, and Europe holds 60% of the total global production. 

Italy leads the list with 54.8m hectolitres and Spain with 44.4m hectolitres. Third comes France with 24.1m hectolitres. 

As for organic wine consumption, things are a bit different. France is still part of the group, but Germany and the United Kingdom are the other two leading countries.

In Germany, almost 22% or 8.9m buy organic wine less than once a month, and in France, 9.3m 12-bottle cases were sold only in 2020. The increasing demand in France is expected to grow sales up to 17.3m cases by the end of 2022. Last but not least, in the UK, of the total 3m, the organic wine consumption is higher by 5%, and by the end of 2022, this percentage will be nearly doubled to almost 10%. 

Predictions show that the organic wine market will reach 87.5m cases by 2022 and that Europe will have 78% of the total organic wine market in the world. Also, the organic wine subcategory is predicted to make the most progress, with more than 9% compound annual growth from 2017 to 2022.

Ingredients

  • 1 Cup Maschio Extra Dry Prosecco

  • ½ Cup Sugar

  • 3 Tablespoons or 6 packets gelatin

  • 2-3 Wine Bottle (or gummy bear if you’d prefer) molds

  • 1 cup cranberry juice for color and flavor

Instructions

  1. Place the wine, sugar, cranberry and gelatin in a saucepan over medium low heat (if you want to keep the alcohol in, make sure to keep under 90 degrees). Whisk for 2-3 minutes or until sugar and gelatin have dissolved. (Stir in a little pink food coloring if making Rosé gummy bears)

  2. Using a glass measuring cup with a spout, pour the mixture over the molds . Use an offset spatula to get rid of the excess and ensure all the molds are filled.

  3. Refrigerate for at least 90 minutes.

  4. When gelatin has set, bears will easily pop out from mold.

  5. Store uneaten wine gummy bears in an airtight container in the refrigerator

Krug Celebrates Les Creations de 2008 with Chloe Flower and Chef Angie Mar

Nicknamed “Classic Beauty,” Krug 2008 is arguably the most highly anticipated Champagne release of the 21st century. To mark the momentous occasion, the centuries-old Champagne House and Chloe Flower collaborated on two musical pairings inspired by the creations of the year, opening new gateways to the senses.

The first to experience the sought-after Creations of 2008 – Krug 2008 and Krug Grande Cuvée 164th Edition – were a maverick group of Krug lovers, musicians, and creators including Prabal GurungBabyfaceAmanda NguyenPhilip LimEzra Williams, and Sally Lapointe among others, who joined Krug and Chloe for a performance, tasting, and dinner – a sensorial trifecta.

“For centuries, my family has been defying conventions,” says Olivier Krug, Director of the House and sixth generation of the Krug family, “which is why today this non-conformist spirit lives on in everything we do.” That spirit is mirrored in Flower’s own genre-bending approach to music and brought to life in the compositions she created with the House. After debuting these Champagne-inspired pieces at Brooklyn non-profit music venue National Sawdust – “Echoes of 2008” and “Grande Cuvée,” Chloe invited guests next door for a unique dining experience inside Alan Eckstein’s Somerset House, an impeccably curated collectible design shop for a stunning French pairing menu by another Krug lover, the visionary Chef Angie Mar.

When speaking of what makes Krug 2008 such a beautiful wine, Cellar Master Julie Cavil notes “Due to the cool and balanced climate of 2008…the grapes could take their time to mature in tranquility, ultimately exhibiting beautiful freshness upon harvest. Surprisingly, despite these mild and constant conditions, we observed great heterogeneity from plot to plot. The beauty of this contrast was the inspiration to blend complementary flavors from different plots including Ay, Bouzy and Ambonnay. Krug 2008 is a great classic of the House.”

Of her composition process, Chloe notes: “The way I approach composing parallels how Krug picks its grapes. Each sound has a critical and emotional responsibility. I play out each instrument separately, violins, violas, horns, percussion, to finetune each voice and its individual role in the greater composition. It is very similar in process to creating a bottle of Krug, and I think that is what produces the best experience in both taste and sound. You enjoy the final arrangement but cannot decipher every individual detail that went into creating it. Instead, you experience something effortless with rich harmonies and depth.”
