Harvest Hues in a Glass: Exploring Rich and Warming Fall Cocktails

Summer is over, and the brisk chill air has hit the city. As the leaves begin to turn and we take out our Aumtmn fashion, you may find yourself sitting by the fire, hopefully with a cocktail in hand, Whether you enjoy a classic apple-based drink or an Irish Coffee to get through the day.

If you’re looking to shake things up this Fall, here are a few cocktails to try:

Good Morning Sunshine

  • Sunshine Punch (SRP $24.95)

  • Cold Brew Coffee

  • Cinnamon Stick

  • Orange Wheel

Combine 1 part Sunshine Punch with 1 part Cold Brew Coffee over ice. Stir, garnish with cinnamon stick and orange wheel. Enjoy!


Moonraker

  • 1 1⁄2 oz Gin (New Amsterdam)

  • 3⁄4 oz Amante 1530

  • 3⁄4 oz fresh lemon juice

  • 1⁄2 oz green tea simple syrup*

  • (3) 1⁄4” cucumber rounds

Quarter two of the three cucumber wheels and muddle with the lemon juice in a shaker tin. Add the other ingredients and shake well with ice. Double strain into a chilled coupe glass. Float the last cucumber wheel as a garnish.

*Green Tea Syrup - Equal parts room temperature Ito En Unsweetened Green Tea (or homebrewed tea of your choice) and white sugar. Shake well to combine, let sit and reshake until fully dissolved


Milagro’s Spiced Pumpkin Miracle

*Made by Ambassador Luis Lopez

Ingredients:

  • 2 parts Milagro Reposado 

  • 1 part Lemon juice 

  • 1 part Orgeat (Liquid Alchemist) 

  • 1 part Pumpkin puree Garnish

  • Smoked cinnamon stick 

  • 2 star anise

Add all ingredients to shaker, shake for 10 seconds to allow all ingredients to dissolve. Finally strain into a tall glass with fresh ice, garnish and enjoy


Apple Cider Margarita

Ingredients:

  • 2oz Flecha Azul Anejo Tequila

    2oz apple cider

    1oz lime juice

    1oz Triple sec

    ½oz agave syrup

    Rim:

    1 teaspoon white granulated sugar

    ¼ teaspoon cinnamon

    ½ teaspoon sea salt

Rim the glass by running a lime wedge over the lip. On a separate shallow plate, combine cinnamon sugar and salt. Dip glass. Fill the glass with ice. In a cocktail shaker, add cocktail ingredients. Shake well. Garnish and serve.


Appily Married

  • 1.5 oz Ketel One Vodka

  • .5 oz apple juice

  • .5 oz pink grapefruit juice

  • 2 spoons honey syrup

  • Garnish: Cinnamon sugar, for rim

Chill a cocktail glass and coat the rim with cinnamon sugar. Add Ketel One Vodka, apple juice, pink grapefruit juice, honey syrup, and ice to a cocktail shaker. Shake until well chilled. Strain into a cocktail glass and serve.

Upon opening a bottle of the 2018 Archimedes, one is welcomed by enticing aromas of cocoa, toffee, and raisins. Pouring and tasting reveals a wine that is dark in color. Rich, smooth tannins, and plush, mouth-coating flavors of mocha, cassis, and clove tantalizing the palate with hints of tobacco on the long finish. The 2018 Archimedes was aged for just over a year and a half in French oak barrels with a large portion of new wood. The final result is a beautifully integrated wine. With this wine we pay homage to Francis's Uncle Archimedes, who loved math and mechanics as much as his namesake.

San Felice Chianti Classico DOCG 2021 Produced entirely from native grapes, it is a typical, medium-bodied Chianti Classico, with a distinguished personality and notable for its elegance and pleasantness. The 2021 vintage was characterized by a mild and dry winter. The germination was consequently brought forward to the end of March for the earliest varieties and for the best exposed vineyards. On the nights of April 8 and 9, the temperature dropped a few degrees below zero, significantly reducing production. Thankfully the spring was rainy, allowing the plants to tolerate a long, hot summer. Production was poor but, as often happens, the small quantity corresponds to an excellent quality.

The Double Diamond Cabernet Sauvignon 2019 offers intricately woven layers of decadent flavor, complemented by exotic spice components and a refined tannin structure. It highlights all the best attributes of what defines Oakville as the epicenter for Napa Valley Cabernet Sauvignon. Aging for 17 months in French oak Barrels (52% new).

Belle Glos Clark & Telephone Pinot Noir  Known for its iconic red wax top, Belle Glos is the perfect bottle to grab this National Red Wine Day. The Baldacci Family Vineyards Fraternity Red Blend is a beautiful Napa Valley wine that’s perfect for these late summer days. The 2021 Fraternity Red Blend recently received 94 points from Decanter Magazine and is one of those special Napa wines that drinks really nicely without needing to be aged! The blend is made of Cabernet Sauvignon (73%), Petit Verdot (17%), and Syrah (9%). It shows off ripe pomegranate, blackberry and spice from the Cabernet, a gorgeous color and cocoa nuance from the Petit Verdot, and lovely floral notes from the Syrah. The wine is elegant and powerful, and perfect to cheers with this National Red Wine Day. It’s available via the winery website or at all Total Wine & More locations across the U.S.

Crosby Roamann is a boutique producer of minimal intervention wines in Napa. The proprietor Sean McBride, and his wife Juliana, believe that wine is a living thing that has transformative power – a bridge to the future, to the past, between people to share love, or to reminisce. For them, winemaking is a family affair – focused on making distinctive, limited allocation wines by hand with the greatest care, ensuring lively wines of character and a true sense of place. The Estate Merlot comes from an old vine, dry-farmed vineyard. These big vines grow in a deep clay soil near a tributary of the Napa River. The fruit was manually sorted and fermented in stainless steel, then aged twenty months in French oak barrels, 33% new. The Estate Cabernet is a very small production cuvee destined for eight plus years of bottle development, with at least three years to reach full maturity. With extraordinary purity of fruit, and delightful notes of cassis, dark cocoa, and blueberry, the wine finishes with a touch of spice.

Ingredients: 2 oz Off Hours Bourbon
1 oz honey (or simple syrup)
1/2 oz lemon juice
Sprig of rosemary
4-6 blackberries

Instructions: Combine Lemon juice, honey and blackberries into a cocktail shaker and muddle the blackberries. Add Off Hours Bourbon and ice to the shaker and shake vigorously for about 20-30 seconds until outside of shaker is chilled. Double strain into a glass over ice and garnish with blackberry and sprig of rosemary.

La Fête du Blanc is the newest line from La Fête Wine Company, the makers of luxury rosé La Fête du Rosé. La Fête du Blanc was initially introduced in 2021 as a limited-release white wine and, due to its popularity, has since become a permanent offering. It is made in partnership with the prestigious winemakers from Château Saint-Maur, situated in the Golf de St. Tropez. The blend of the 2022 vintage is 65% Rolle, 26% Viognier, and 9% Colombard. Besides the great taste, setting the wine apart is that the company donates a portion of the proceeds from every bottle sold to various programs that send underserved youth on unique travel experiences.

Château de Pennautier, Cabardès 2020 The vineyard is situated on the sunny, south-facing lower slopes of the Montagne Noire, at between 200 and 300 meters of altitude. South facing, on limestone soils. Ruby colour. Candied fruit and sweet spiced scents. On the palate, pepper, cloves and dark fruit aromas. Light tannin end notes which leave lasting and fresh tastes. Perfect with grilled meats, roasts, poultry, and hard cheeses.

That Maxime Magnon is part of one of the most revolutionary wine movements in France should give him a justifiable swagger to his step, yet he is nonetheless a reluctant hero. Most of Maxime’s vineyard land is comprised of schist and limestone subsoils in the sub-appellation Hautes Corbières, bordering Fitou to the South. This is incredibly tough terrain to farm in, as there is virtually no topsoil, just pure rock and garrigue. The Corbières “Rozeta” is a blend of these two district terroirs. This blend is particularly unique, from Carignan vineyards that are dispersed with numerous varietals of older vines, namely Grenache Gris, Macabou, and Terret, which are all picked and fermented together—a true field blend of the old school. “La Démarrante” is a blend of Carignan, Grenache, and Syrah. It is terrific young and deliciously quaffable. Maxime’s tête de cuvé, “Campagnès,” is a single vineyard of the hundred-year-old Carignan, and is the most age-worthy in his line-up. All wines are aged in second-hand, Burgundian barrels sourced from a producer in Chassagne. “La Démarrante” ages both in cuve and in foudre. His wines offer great expression of fruit with immediate approachability.

Domaine Ventenac Cuvee Diane Rosé - Delicate and fruity on the nose with notes of red berries. Fresh and lively on the palate with remarkable length. Olivier and Stephanie Ramé took over the domaine from Stephanie’s father in 2010 and have become a driving force behind the quality and credibility of the Cabardès appellation. They now own approximately 130 hectares of land, which primarily consists of white limestone soil, unique to the region. Their vineyards are farmed organically (certified as of the 2021 vintage) and vinified plot by plot, using indigenous yeasts and little to no sulfites. Heavily influenced by his travels throughout the winemaking world, Olivier has begun to use amphorae (terracotta) for aging and is focused on the unique terroir of each parcel. Olivier describes his wines as being pure, fresh and “without makeup,” showcasing the soul and potential of the region.

CHÂTEAU HAUT GLÉON APPELLATION D’ORIGINE PROTÉGÉE CORBIERES - a deep, brilliant pink colour with raspberry reflections. Intense on the nose, dominated by raspberry and blackcurrant fruit. Powerful and rich in flavour on the palate (wild strawberries, mild spices) with a long, fruity finish. Ideal with spicy dishes, tapas, grilled meat or dessert with strawberries. Serve 12°C.

Aromas of blackberry, cherry, toasted almond, bay leaf and mocha, lead to a palate of luscious ripe cherry and cassis with savory notes of dried herbs. Retails for $75.

2020 Aperture Bordeaux Red Blend

For this vintage, you’ll find a crafted a distinct Bordeaux blend, composed almost equally of cabernet sauvignon, malbec, and merlot, delicately balancing with a smaller inclusion of cabernet franc. The ripe red fruit characters are structured by silky seamless tannins, showcasing an elegant density to the blend. The 2020s are expressive in their youth and are drinking beautifully with a decant now, and will only continue to reward with cellaring. Retails for $60.

San Felice’s IL GRIGIO CHIANTI CLASSICO RISERVA DOCG

Made only from the finest  Sangiovese grapes carefully selected from the estate Chianti Classico vineyards,  this Reserva represents the perfect blend of the traditional and the modern. It spends some 24 months  in oak, with about 20% in small barriques, and one year in the bottle. The front label bears Titian’s famous portrait of a medieval knight in armour.

Double Diamond Cabernet Sauvignon 2019

The 2019 vintage of Double Diamond offers intricately woven layers of decadent flavor, complemented by exotic spice components and a refined tannin structure. It highlights all the best attributes of what defines Oakville as the epicenter for Napa Valley Cabernet Sauvignon. Aging for 17 months in French oak Barrels (52% new). Retails for $80.

Rosa Regale Sparkling Rosé

A semi-sweet rosé sparkling from Piedmont, Northern Italy. Made from the Brachetto grape, the nose is highly aromatic with hints of sweet grapefruit, orange, rose petals, and ripe melon with crisp acidity and softness on the palate. Lovely served chilled on its own, and also makes a great base for V-Day cocktails. 

PATRIMONY Estate Cabernet Sauvignon 2019

This vintage is the epitome of a terroir-driven wine that has immense power without sacrificing any elegance. The wine explodes out of the glass with boysenberry fruit, crème de cassis, cedar, cigars, crushed stone and lead pencil accompanied by a perfume of violets. Deep and full-bodied, rich with astonishing texture, it manages to stay fresh and balanced throughout with a finish that does not stop. 

Liquid Light 2021 Rosé

At 95 calories a serving, this bright and fruity lower-calorie, no sugar added Rosé from Washington State is the perfect wine to ease back in after recovering from the holidays.
