Ingredients

  • i. 20 oz. ground beef.

  • ii. 2 Roma tomatoes.

  • iii. 2 cups chicken stock concentrate. 

  • iv. 2 yellow onions. 

  • v. 1.5 oz. tomato paste.

  • vi. 4 green bell peppers.

  • vii. 2 tbsp. Tuscan heat spice.

  • viii. 1 cup Mozzarella cheese.

Ingredients not included in your meal kit;

  • i. 9 tsp. vegetable oil.

  • ii. 2 tbsp. butter.

Directions

Step 1:Prepare the  oven;

i. Adjust the rack of the oven to a middle position and preheat the oven to 425 degrees. 

Step 2:Wash and pat all your fresh produce dry. 

Step 3: Prepare the ingredients;

  • i. First, halve the bell peppers lengthwise, removing the stalks and seeds. 

  • ii. Next, place the halved peppers on the baking sheet and drizzle each half with oil; rubbing the oil to coat. 

  • iii. Then, season the peppers with salt and pepper. 

  • iv. Now, roast the peppers on medium heat for 20 minutes, or until browned and softened. 

Step 3: Meanwhile, prepare and cook a couscous;

  • iii. Then, cook while stirring for about 3 minutes, or until toasted. 

  • iv. After that, add 1½ cups water to the pot and bring the couscous to a boil.

  • v. Thereafter, cover the pot then reduce the heat to a low simmer and continue cooking for 8 minutes, or until the couscous is tender. 

Step 4: While couscous cooks, prepare and cook the beef; 

  • i. Start by halving, peeling, and dicing the onion. 

  • ii. Next, finely dice the tomatoes.

  • iii. Thereafter, add a drizzle of vegetable oil to the large pan and heat over medium heat until hot enough. 

  • iv. Now, add the diced onion slices and cook while stirring for 5 minutes, or until softened. 

  • v. Then, add the beef and Tuscan heat spice; seasoning them with salt and pepper. 

  • vi. After that, cook the beef until browned and cooked through, or for further 5 minutes, making sure to break up the meat into pieces. 

  • vii. Thereafter, stir in the tomato paste and diced tomato.

  • viii.  Now, add stock concentrate and ⅓ cup water and season the mixture with salt and pepper before simmering until slightly thickened, or for 2 minutes. 

  • ix. Then, stir in the couscous until thoroughly combined, before turning off the heat.

Step 5: Finish the bell peppers

  • i. Once the bell peppers are done, remove them from the oven.

  • ii. Next, stuff each bell pepper half with as much filling as you desire. 

  • iii. Then, place the bell peppers in the ovenproof pan with the remaining filling, making sure to nestle each stuffed pepper half into the mixture. 

  • iv. Now, sprinkle evenly the bell peppers with mozzarella.
