The Perigon, Miami Beach’s premier destination for oceanfront living, announces today a new partnership with celebrated Michelin-starred chef, Shaun Hergatt, curating the food and beverage concept at the property including the private restaurant and speakeasy.

Chef Shaun Hergatt, the executive chef and owner behind some of New York’s most famed Michelin-starred restaurants both public and private, including Vestry in Soho and 432 Park Avenue respectively, is renowned for his technically precise cooking and painterly presentations. Nota at The Perigon will be Hergatt’s first-ever Mediterranean concept, while FiftyThree, a speakeasy cocktail lounge, will have a bold, playful style.

Taking advantage of the oceanfront location and abundance of rich, local ingredients, Nota at The Perigon is centered around a clean, crisp palate. With seafood anchoring the Mediterranean- inspired menu, Chef Hergatt plans to use woodfire grilling techniques to create dishes that are elevated yet approachable, with health and wellness at the forefront.

The interiors of Nota were designed by Tara Bernerd to blend into the larger residential concept at The Perigon. The design will incorporate rich materials from intricate stones to linens. The furniture will integrate a unique combination of organic materials with subtle hues that cohesively blend to the environment of coastal living on the sands of Miami Beach. The oceanfront restaurant will accommodate up to 70 guests, with service extending to the pool deck.

The speakeasy, FiftyThree, will experiment with bold colors and patterns, embracing a whiskey- themed palate. Darker browns and greens will set a more intimate mood, featuring bronze fixtures and accents creating the perfect nighttime setting. The cocktails will also embody the more playful aesthetic, while focusing on fresh ingredients and creative curations.

The Perigon’s food and beverage concept represents Chef Hergatt’s triumphant return to South Florida. Chef Hergatt first debuted in Miami in 2005 when he was the executive chef at The Setai Miami Beach. Hailing from Australia but having worked at restaurants around the world garnering international accolades for culinary craftsmanship, Chef Hergatt is known for two of his Michelin- star restaurants, Juni and Vestry, and previously SHO Shaun Hergatt, which garnered acclaim for its geographically inspired dishes. Today, one of Chef Hergatt’s many restaurants is the Caviar Bar in Las Vegas. Many of his most famed dishes are inspired by his travels and surroundings, an approach he will bring to The Perigon.

Completing the culinary experience at The Perigon will be several additional private amenity spaces for dining and lounging. An indoor-outdoor conservatory doubling as a breakfast lounge and terrace will host residents for their early morning coffee. Here, a barista will be available upon request to serve hot or iced coffee to a resident’s liking. Residents can also request meals be delivered directly to their private residence or to their poolside cabana.

Further elevating the experience at The Perigon is a new private concierge partnership with BHB Private Concierge, a premium provider servicing private properties and clients. In addition to offering residents seamless experiences tailored to their individual wants and needs, the concierge at The Perigon will further enhance the programming throughout the amenity suites.

Known internationally for his flavorful and imaginative dishes, Aviv’s Branja offers options for every palate. A cultural expedition, guests entering Branja step back in time to Tel Aviv in the ‘70s. With a distinct retro design and warm pastel colors, every detail is carefully curated. Branja’s interior and exterior design is a cross between Tel Aviv’s iconic indoor-outdoor train station structure and a cathedral structure, and ancient Synagogue seating, while a towering outdoor mural depicts retro art vignettes by Tel Aviv-based artist Paul Curran, representing the city’s neighborhoods and bustling markets.

The idyllic, covered outdoor terrace, seat 150s, and blends the sights and smells of Tel Aviv with the bustling Buena Vista neighborhood. Curran’s 45-foot tall mural, greets guests with retro patterns and colorful vignettes inspired by Tel Aviv. Branja’s menu pulls inspiration from around the globe, while incorporating the signature spices and flavors of generational Israeli recipes. Dishes will change seasonally, as Branja sources ingredients locally. Intentionally light and designed for sharing, signature dishes include Fish & Bread, a flavorful ceviche style appetizer, and fresh takes on classics like Falafish, a Falafel and juice fish hybrid and Fishwarma, made with a spiced fish mix that includes fatty salmon and grouper to emulate classic shawarma. Other creative dishes include Krouv - “Cabbage” in Hebrew - which, through a four stage preparation, mimics a slow cooked short rib. Guests can also opt for the Mama Ligua,  a fresh corn polenta with caramelized leeks and truffles. Branja is a Kosher-style restaurant, and Kosher meat dishes include Tuktuk Kebab - a Branja favorite that uses Thai-inspired ingredients - tamarind glaze and a herbaceous seasoning - for a perfectly sweet and sour ground meat; Beef Tarpaccio, which elegantly melds classic beef tartare and carpaccio; and  Orthodox steak, a premium quality Glatt Kosher ribeye. To end on a sweet note, Branja showcases a selection of addictive desserts, including Layali Beirout, a modern take on a Lebanese classic, and Halva Crack Pie, which plays on familiar forms and nostalgic flavors distinctive of Israel.

2020 Aperture Bordeaux Red Blend

For this vintage, you’ll find a crafted a distinct Bordeaux blend, composed almost equally of cabernet sauvignon, malbec, and merlot, delicately balancing with a smaller inclusion of cabernet franc. The ripe red fruit characters are structured by silky seamless tannins, showcasing an elegant density to the blend. The 2020s are expressive in their youth and are drinking beautifully with a decant now, and will only continue to reward with cellaring. Retails for $60.

San Felice’s IL GRIGIO CHIANTI CLASSICO RISERVA DOCG

Made only from the finest  Sangiovese grapes carefully selected from the estate Chianti Classico vineyards,  this Reserva represents the perfect blend of the traditional and the modern. It spends some 24 months  in oak, with about 20% in small barriques, and one year in the bottle. The front label bears Titian’s famous portrait of a medieval knight in armour.

Double Diamond Cabernet Sauvignon 2019

The 2019 vintage of Double Diamond offers intricately woven layers of decadent flavor, complemented by exotic spice components and a refined tannin structure. Happy National Espresso Day! Can you imagine a world without such a glorious and uplifting drink, we certainly wouldn’t want to. The origin of the word 'espresso' came from the espresso machine. This name was given by two men, Luigi Bezzera & Desiderio Pavoni, in Venice, Italy, who after years of tweaking their coffee making machine came up with a newer model in 1903. They called the coffee made with a newer machine - cafee espresso.

1oz Perc Coffee Liqueur by Saxtons River Distillery (Available on TotalWine)

.5oz Saxtons Maple Liqueur

1oz Shot of Espresso (roughly 1 oz)

2oz Vanilla Vodka

Grated Cinnamon

—Martini Glass

(Build this recipe in a cocktail shaker)

  • Add 1 oz Perc Coffee Liqueur, .5 Saxtons Maple Liqueur, 2 oz of Vanilla Vodka of your choosing, and one shot of Espresso.

  • To obtain the desired foam on top of martini, shake it more than you think you should, and then some!

  • Immediately strain into a martini glass and garnish with a sprinkle of grated cinnamon

  • ** Optional, add a dollop of *homemade maple whip cream!

Chelsea’s Tips:

-To make the Maple whipped cream — in a shaker or a mason jar, add 6 oz of heavy whipping cream and 1 oz of maple syrup. Shake this until desired consistency! Be careful not to shake past the point of whipped cream, as you will begin to make butter.. (not the worst accident you’ll ever have!)

-Consider creating your own vanilla vodka! Simply choose an unflavored vodka and add 1 vanilla bean per liter. Let sit in a cool dry place. Results will be noticeable within 24 hours, however the longer you wait, the more flavor you’ll get.

NEFT Egg White Espresso Martini
1.75 oz NEFT Vodka

1 oz chilled espresso
.5 oz simple syrup
3 dashes walnut bitters
2 dashes cocoa powder

1 oz egg white
Shake all ingredients except egg white in mixing tin with ice and shake vigorously. Strain into martini glass. Add egg whites to a dry mixing tin and shake well, then add ice and continue to shake until a foam builds, and layer over cocktail. Garnish with cocoa powder.

La Marielita Rum is thrilled to announce the launch of the inaugural blend of the premium hand-crafted blended Panamanian rum.

Led by Janet Diaz-Bonilla, the first Cuban-American immigrant woman to found and own a rum brand, La Marielita Rum is a proud collaboration of Janet Diaz-Bonilla and fellow Cuban rooted masterminds Francisco José “Don Pancho” Fernández Pérez, also known as the Godfather of Rum and artist Humberto Benitez.

La Marielita Rum is inspired by the 1980 Mariel Boatlift, an exodus initiated by a political movement where thousands of Cubans sought refuge at the Peruvian embassy. At six-years-old, Janet Diaz-Bonilla, alongside her parents, embarked on a journey from Mariel, Cuba to Key West, Florida, only to be transferred upon arrival to a holding camp for 53 days before being awarded their freedom. Janet embarked on this journey to craft La Marielita Rum to honor and celebrate hard work, dedication to family, and gratitude for freedom.

Acclaimed Cuban-American artist, Humberto Benitez, shares the founder’s roots and understood the importance of illustrating an image that encompassed the sentiments and authenticity of La Marielita’s story for the bottle’s label. “The painting I created for the label art of La Marielita Rum is a story of hope, determination, boundless spirit against the odds, and the beauty of those who carry that spirit over the horizon,” says Humberto Benitez. La Marielita Rum is aged in Bourbon curated American white oak casks for at least 18 Years with no additives or artificial flavorings. With a burnt toffee and oak aroma, the rum gradually transitions into cacao flavors as it grazes the palate; with layers of vanilla, coffee bean and orange blossom lingering, it then evolves into tenors of hazelnut and chocolate and ends with a smooth and balanced finish.
