Down in Laccasine, Louisiana exists Bayou Rum, a handcrafted rum bringing back the lost artisanal art of American rum making. It is locally grown from fresh sugarcane molasses, distilled twice in copper pot stills, and aged in bourbon and sherry casks. Its range includes Bayou White ($20), Bayou Spiced ($20), barrel-aged Bayou Reserve ($30), and Bayou XO Mardi Gras ($80).
But how does the Louisiana liquid differentiate itself?
Location, location, location: The craft distillery is strategically placed in a humid microclimate which allows for a smoother, less ‘woody’ rum when compared to its Caribbean counterparts. Master Distiller, Reineil Vincente, praises the benefits of the Mississippi Delta, and the quality sugarcane that exists right in his backyard.
Rum Master and his techniques: Master Distiller Reiniel Vincente, a second-generation rum maker originally from Cuba, brings twenty years of experience and the Solera method to the distillery.
Solera method: The barrels are tipped on their sides, filled with Bayou Rum, and then vertically stacked into a pyramid. The oldest rum barrels end up on the ground. When a batch is created, the bottom barrel is tapped for part of its content to be bottled. Then that bottom barrel is topped off from the next oldest barrel above it, which is filled from the next oldest, and so on.
Official Rum of the New Orleans Saints: Officiated in August 2022, the partnership celebrates the finest of the South and showcases the spirit and the pride of Louisiana in every sip. The Bayou-Saints partnership will also be celebrated with a Bayou® XO Saints Limited Edition Release of only 5,000 bottles that will be available sometime in 2023 at a suggested retail price of $75.
Direct ties to authentic, Louisiana cuisine: When you think of Louisiana, you think of jazz, French nuances, but most importantly - its culinary scene and authentic, Creole cuisine. Each Bayou expression lends itself perfectly to signature dishes such as Crawfish/Shrimp boil, Jambalaya, and Andouille. What better rum to pair with these world-renowned options?

In 1776, John and James McConnell opened their Belfast distillery, where they crafted the first recorded Irish Whisky Brand, which would become a popular export worldwide.
